The native Cataratto is hand harvested slightly early from high elevation vineyards with naturally limited yields. The first pressing is fermented in acacia wooden barrels before second pressing and fermentation in stainless steel for 14 days with malolactic fermentation. This brings a natural wine that has a complex nose of
